Chocolate Chip Cookies

Since I started my baking journey, I’ve tried out many Chocolate Chip Cookies Recipes, but yet to find one that impressed me. Not until few days ago, where I’ve came across the Perfect Chocolate Chip Cookies (Adapted form New York Times Chocolate Chip Cookies Recipe).

Experiences that I encountered previously when baking with different recipes of chocolate chip cookies, either I ended up with a cookie that is too sweet, too chewy, too hard or some even had a cakey texture. :(

With this recipe, I managed to bake a perfect chocolate chip cookies which tasted crispy on the outside and slightly chewy on the inside. Not forgetting to mention the gooey chocolate chunks which tasted slightly bitter, just good to balance up the sweet cookies.


  • 8.5 oz (2 Cups minus 2 tbps) cake flour (superfine flour)
  • 8.5 oz (1 2/3 cups) bread flour
  • 1 1/4 tsps baking soda
  • 1 1/2 tsps baking powder
  • 1 1/2 tsps salt
  • 283.5gm (2 1/2 sticks) unsalted  butter
  • 9.5 oz light brown sugar
  • 8 oz castor sugar
  • 2 large eggs
  • 2 tsps vanilla extract
  • 567gm bittersweet converture chocolate (I use 62% cocoa content), cut into chunks

* Use converture chocolate rather than chocolate chips due to chocolate chips are added with wax for it to hold it’s shape. You won’t be able to get the gooey texture of melted chocolate in the cookies if you are using chocolate chips.

1. In a separate bowl, sift together cake flour, bread flour, baking soda, baking powder and salt. Set aside.
2. Cream butter and sugar together until light and fluffy, for about 5 minutes. Add in egg, one at a time, mixing well after each addition. Add in vanilla extract.
3. Using a rubber spatula, stir in dry ingredients. Mix until just combined.
4. Stir in chocolate chunks.
5. Press a plastic wrap on dough surface and refrigerate for at least 24 hours.
** the purpose to refrigerate the dough is to let the dough fully soak up the eggs, to create a caramelized taste in the cookie and also the texture! 
6. When ready to bake, preheat oven at 200 Deg C. Line a baking tray with parchment paper. Scoop a big amount of cookie dough and place it on the baking sheet. Bake for about 15-17 minutes until cookies are slightly brown.
7. Let the cookies sit on the baking tray for around 10 minutes after removal from oven. Then let it cool on a wire rack.
8. Store in air tight container once it’s completely cool.
