Green Tea (Matcha) Swiss Roll

I love swiss roll, always buy pandan kaya swiss roll from King’s Confectionery. I love pandan flavour cakes/nyonya kuih… mm.. but anything green in color looks good right… not Hulk though.. >.<

While I was searching for baking recipe, I stumbled across this matcha swiss roll in Christine’s blog. It’s green! Wait no more, I bake this for weekend.



This recipe calls for 9 egg yolks. Looks at those egg yolks… lovely!

Prepare one 31.5cmx23cm baking tray (use two trays if you want thinner rolls)

Ingredients:
6 egg whites
9 egg yolks
100 + 60 gm caster sugar
90 gm plain flour
25 gm corn flour
50 ml olive oil (or vegetable oil)
3 Tbsp hot water
2 Tbsp green tea powder
Ingredients of filling:
1/2 cup whipping cream
4 tsp caster sugar

Method:

1. Preheat oven to 220C (428F). Line a baking paper/parchment paper on a greased baking pan.
2. Stir in green tea powder into hot water and mix thoroughly. If lumps appear, use a sieve to filter out the lumps.
3. Mix plain flour and corn flour. Sift it.
4. Whisk the egg yolks with 100gm sugar until smooth, creamy but not bubbly. Stir in tea powder mixture and combine well.
5. Whisk egg whites for a while until bubbles form. Mix in 60gm sugar in 3 additions and beat until stiff peaks form.
6. Fold in egg whites to egg yolks mixture, 1/3 portion at a time.
7. Fold in the flour mixture into the egg mixture. Then quickly add in oil.
8. Pour the batter in the lined baking tray and level it. Bake for 10-15 minutes, or until golden brown.
Remove from the oven and transfer to a wire rack. Let the cake cool down.

To make the filling:
1. Chill mixer beater and mixing bowl in the fridge for 15 minutes.
2. Beat whipping cream with caster sugar with the chilled electric mixer and bowl until smooth and creamy.

To roll the Swiss roll:
1. Do not wait for the cake to cool. While it is still warm, turn the surface of cake onto a clean towel. Peel off the baking paper. Roll it with the towel and let it sit for 10 mins.
2. Unroll the cake and spread the fillings. Roll it back and let it sit with the towel rolled together for 5-10mins.
3. Chill the cake, slice it and enjoy!
